I have been trying to use the Settings Catalog instead of a custom profile to configure the items in the dock on devices. The profile delivers ok though the payloads for persistent/static apps don't appear on the device. I have tried several combinations of tile type and file type though nothing ever seems to land on the client.
Could anyone confirm this should be working and what combination of settings I should use for managing applications in the dock, or is there a known issue?

@Mark Cain, Thanks for posting in Q&A. For your situation, I know the Dock policy is applied but it is not working. After researching, I didn't find any known issue with this. I suggest open case to troubleshoot it. Here is a link with the steps to open case for your reference:

Were you ever able to figure it out? I am currently confronted with the same issue unfortunately.
Unfortunately not, I just used my custom profile and moved onto the next Intune challenge
How did you do it in the end? Although there are supposedly many options I was not able yet to figure one out which really works.
Did you give your users the option to edit / remove the dock items ?
We have 2 main types of users, allocated laptop/device or shared/classroom device. For the allocated laptops I took elements of this and bunged it in our Octory termination script

For our shared classroom devices who log in using Active Directory I just put in static apps as users move around so generally they wouldn't customise the dock. I used iMazing Profile editor to create

Glad I could help, would be nicer if the built in tools worked as expected. Perhaps on a quiet day I'll engage with Microsoft Support to figure it out, quiet days don't seem to happen anymore sadly.

I'm trying to accomplish the same thing; we opened up a Microsoft Premier ticket but no luck!
Our macOS devices are supervised ADE enrolled, there is no in-dept documentation whatsoever how to customize the dock. Intune settings catalog for macOS documentation is super basic and high-level.
My ask is to remove or hide unnecessary apps from macOS laptops using Intune policy.
