I got it. In case anyone else comes across this, I changed the Virtual Device Node to SATA Controller and then the Azure Migrate Appliance picked up the disk almost immediately.
Azure Migrate - Vmware no Disk detected
For some reason one of my VMs in vsphere that I am trying to migrate using an azure appliance is being detected with no disks, so I cannot migrate it.
I am at a loss as to why this is happening. It is not a dynamic disk, and for all intents and purposes that I can see, meets all criteria to be migrated to Azure.

I created a new VM (without the data) and it detected it fine...with the exact same settings. Anyone have any pointers they might be able share or some guidance? Thanks!

The issue might be related to a NVMe controller configured in your VM, since Azure Migrate can see the disks after you changed the controller. You can move your VM by migrating it as a physical machine. https://learn.microsoft.com/en-us/azure/migrate/tutorial-migrate-physical-virtual-machines
As another option, you can use StarWind V2V converter to migrate your VM to Azure.
