I have this same issue. Try disabling Add-ins. I disabled "LogiOptionsExcelAddin" and now the issue is gone.

I am unable to select a single column in a table. I've been using Excel for a very long time. In the past, I selected one or more columns by using the column headings. However, when I do that now, the selection expands to include all columns in the table, whether I am trying to select just one column or multiple columns. I tried using the F8 key to no avail.

Unfortunately, the conglomeration of builds for Windows Office is a rat's nest I haven't kept pace with for quite some time. Although someone familiar with your release may stumble upon your message here in the Mac Excel Community you'll get much faster & more pertinent response if you post to the Community that deals with the specific product you're using. Use this link & select the appropriate Office Product when you do.
Yes, I do have merged cells in some rows. Lots of them. In the past, that was not an issue. Do I have to unmerge all cells? I just wanted to adjust column widths for selected columns without having unmerge and then merge again.
Do you have merged cells in one or more rows? That would explain the behavior that you describe.
