As per your description, turn on the Show/Hide feature so you can see non-printing characters. Each line that has to have different alignment has to be a separate paragraph.
Word assigns alignment at the paragraph level. The most efficient way to align all your text is to define styles for the various script elements (with the desired font and paragraph formatting, including Spacing Before/After) and then apply those styles systematically to the relevant paragraphs.
