How do I opt out of the Authenticator app? After upgrading my phone, I've lost access to my work email because I'm stuck in a login loop.

The purpose of authenticator app is to add another level of confirmation (besides email and password) of your login.
Stolen ID, brute force attacks etc are very common nowadays. Once someone gets into your account, they can do untold amount of damage to your company, your collogues and your customers...but this is a discussion for another day.
Your work email is tied to the version on your old phone. If you still have your old phone, you can use that to authenticate, and make sure you migrate it to your new phone.
If the phone is no longer available, you have to ask your company admin to reset your account.
If you want to opt out of authenticator app, and your company requires multi-factor authentication, you might have to ask your company to second authenticate you via other means, such as sms, key fob...etc.
