AAD connect matching attributes

When a matching is created for two ADs via hard match (consistencyGUID) how can I choose which additional attribute is the "leading one" when the attributes are synced?

i.e. both source objects have different companies, departments, phone number...which company name does appear in AzureAD by default and can I change this default behaviour if necessary?

    What do you mean both source objects? The match it between a source object (AD) and a target object (Azure AD), with the attribute values from the former overwriting values in Azure AD.
