Cleaning server stored files of Roaming Profiles

Good evening,

I have problematic situation in the company. We have roaming profiles for each employ, and catalogues that were setup for the synchronization were Documents, Desktop, and AppData. Unfortunately our file server is short of space and IT company setup maximum disc space for those files just 2GB. Because of type of our work we have of course much more data in that folders, so we decided to ask IT company to change this setting to synchronize only Desktop. But now during the logoff of the user is an error of synchronization, and during the login user is downloading and overwriting all the files from month ago, that are still stored at the server.

We would like to clean the old files, or actually delete completely all the stored files from the server, that the users will synchronize only the Desktop catalogue. The question is how to clean those files from the server? And how to preform that task? Of course we don't want to delete users accounts.

From the logical point of view can we just mass delete all the user files and the users gonna synchronize with only allowed catalogues? Is this task is taking a lot of time and need to be done user by user?
