Is there a GPO to automatically pin the basic folder (Desktop, Download, Documents, Videos, Pictures, Music) in the quick access folder and prevent them from being unpin by users ?

Yes, there is a GPO setting that you can use to automatically pin the basic folders (Desktop, Download, Documents, Videos, Pictures, Music) in the Quick Access folder and prevent them from being unpinned by users. The setting is located in the Group Policy Editor under User Configuration -> Administrative Templates -> Windows Components -> File Explorer -> Pinned Folders. You can enable the setting "Prevent users from unpinning folders from Quick access" to prevent users from unpinning the folders.
