If the Edge translator extension you've mentioned refers to the built-in Edge translator, you can refer to this doc, which says:
Microsoft Translator then processes the text to remove any identifiers (such as email or phone number) and stores the text for service improvement purposes.
The details of the communication are covered under Microsoft Privacy Statement – Microsoft privacy.
If you are talking about some translator extensions from Microsoft Edge Add-ons, please refer to this doc, which says:
Microsoft Edge collects aggregated data including the number of times an extension was downloaded and information about how it is performing, such as crash data.
Either way, Microsoft Edge will not collect PII.
