Disabling Exchange Hybrid Setup on SBS 2011

We setup an Exchange Hybrid configuration quite a few years ago to migrate users from Small Business Server 2011 (SBS 2011, Exchange 2010) to Exchange online. The server was just being used for file sharing so it was never decommissioned. We are getting ready to decommission this server. In addition I have a different site where I need to do the same but with an Exchange 2013. Also, finally I have a another Exchange 2013 environment where I will need to migrate users the same way.

In the first two environments we are using the latest AD sync, I can't remember the name right now.

I'm not really sure I'm clear on the steps to decommission Exchange, and the hybrid setup and what ramifications there are to disabling. Should I also disable the AD sync? Is there a step by step guide to follow?
