how can I set up a traffic light system in excel for expired (red), soon to be expired (yellow) and in date alert (green).

I want to be able to add a date and it will change colour and automatically change colour when required for the expired and soon to be expired.

Conditional formatting is common method for this. You create rules that use formulas to determine which cells get formatted. In this case you would need three rules, each with a formula that evaluates to TRUE only for those cells whose data qualifies for each color.
