Modify Windows 10 taskbar

We currently have a SOE that configures the taskbar using the Start Layout option in GPO and an XML file.

We are moving from Chrome to Edge so looking to change out that pinned shortcut on the task bar.

Does anyone know if this is possible as from my understanding the XML for the taskbar only applies at initial logon and then never applies again.

I can capture new profiles that are setup, but we need to change it on peoples current task bars.

    I have deployed new xml with Intune, it has built-in option so you don't need to use powershell cmdlet. I had to change the icon on a start menu, not the taskbar itself, but taskbar might also work because same xml contains both. I applied the xml to Users instead of devices.
