About 40 % of our users are using our tenant and O365 but the rest are using another tenant for O365. Our laptops are hybrid joined so SSO is on by default. How to disable the SSO for specific device groups? We are using Intune.

You can test this app protection policy for office first.
Go to Apps > Policies for Office apps > Create.
Fill in the following details:
Name: Provide a name for your new policy (required).
Description: Optionally, add a description.
Scope: Select how this policy configuration will be applied.
Groups: Choose the specific device groups for which you want to disable SSO.
Configure settings: Select the Office policy you want to apply (e.g., disable SSO)
