We have a WiFi profile deployed to our laptops. The type is WPA/WPA 2-Personal with a preshared key. If I update that key with the new WiFi password will that automatically update on the laptops or will I need to create a new WiFi profile and assign that to all our devices?

Sure. The profile on the client devices can be updated after you change the settings, such as password from the Intune portal.

There are some best practices and recommendations for reference on the official doc. You can click the following link to visit it.

Updating the profile with the new password will update the clients, given that they have internet access to connect to Intune. It the easiest way to do it!

I would however probably create a new profile in case I needed to roll back for any reason and be able to do a phased deployment.
However, in that case you would have to either remove the old deployment or play around a bit with exclusion groups during the transition to avoid any conflicting settings during the assignment.
