What should I do if I'm running into an error signing up for a student account?
You need to use your student account with your organization's school email address if you are using a student/educational subscription. https://azure.microsoft.com/en-us/free/free-account-students-faq/
If you are already doing that, it's possible that if you have some saved browser settings it may be trying to log you into the wrong tenant and you may need to clear your settings or open a fresh browser. Also be sure to confirm that your profile information is correct and that you don't already have a Microsoft account with the same information.
