I've noticed that there is no checkbox that will allow me to send all of my e-mails encrypted.
This option is however present in the desktop version.
If you are referring to OME, then its not available in Outlook Mobile
Note: You can use transport rules to automatically encrypt messages as well based on whatever criteria.
S/MIME is also an option

Agree with Andy, we could use Sensitivity labeling or Secure/Multipurpose Internet Mail Extension (S/MIME) to classify and/or protect content in Outlook for Android as the article mentioned above.

Unfortunately this issue refers to Exchange on premise.
Outlook mobile leverages Microsoft 365 however.
Yes, as mentioned above, "Sensitivity labeling and S/MIME in Outlook for iOS and Android are supported with Microsoft 365 or Office 365 accounts using the native Microsoft sync technology."
Also, it's worthy mentioning that here we mainly focus on general issue on Outlook desktop client, if you still would like to know more about it or need more assistance on Outlook for Android, it's suggested to post your issue on this direct forum, where there are many experts on Outlook for android and could provide you more related information :).
