To check the installation progress, you can use the Azure Stack HCI installer logs.
You can access these logs by connecting to the Azure Stack HCI cluster nodes using Remote Desktop Protocol (RDP) and opening this path location.
C:\Windows\AzureStackHCI\Logs\AzureStackHCIDeployment
In this folder, you can find the log files for each stage of the deployment. You can open these log files using a text editor and check the progress of the installation
If you want delete and restart again, you can delete the resource group where the stack HCI is installed.
