The default font for a New Note in Excel is 'Bold' and I want to set the default to 'Regular'.

    @$$ANON_USER$$

There is no existing option to set default font for it
Generally, to change the font style, we need more manual effort, right-click notes, click format comments.
Or you could use the VBA code, or 3rd-party add-ins to change faster.

Are all charactes Bold in your notes?
By default, the characters of User name are Bold, but the content of notes are Regular.

If your situation is different from what I said above, I would suggest you run Excel in Safe Mode to have a check.
Press Win +R > Enter "excel /safe" in Run dialog > Press Enter, then open a new blank document to insert notes.

If the issue goes awaw, please go to C:\Users\<User Name>\AppData\Roaming\Microsoft\Excel\XLSTART, remove the folders and files temporarily, this behavior could prevent some configurations modifying the default settings when statruping Excel.

If the issue still exists, Please go to File > Options > Add-ins > Manage, COM add-ins > Go, clear the check boxes for any enabled COM add-ins, select OK.

Any updates please let me know.

You should be able to get around it by making an empty cell with a note edited to your preferred format and then every time copying that note (with special paste) from that cell to your working cell.
