Are there best practice to set date & time via Intune on enrolled devices so we can make sure its setup across the fleet as we are not managing it currently and would there be any differences or issues for device patches when they are available?

@Mytoast Admin To set date & time via Intune, please try to configure a configuration profile to make it. There is a setting called "configure time zone" can make it. Please refer to the following link:

From your description, I know you want to setup date&time via Intune and if there will be some issue for device patches when they are available.
Based on my research, we can create a Configure Time Zone policy to setup date&time.

And if the date&time setup successfully, the Windows patches will be received in time on the devices.

If it will delay the Windows patches then how can make sure its delivered on time and without any issues later for the same?

Based on my research, the Windows patches are typically based on Coordinated Universal Time (UTC), Devices in different time zones will receive the patches at the same UTC time, regardless of their local time zone settings, so devices will receive the latest Microsoft patches as they are released without any delay.
