Question

when we mention a person's name in Teams channel we got the notification on activity, Teams and banner

But when we mention a team or channel we get the notification on notification and banner only is there any way to show the notification in team Icon also when we mention Teams or channel???

According to your case description, you want to change the notification method for mentioning a team or channel. Please change the notification method of @mention to "Show in Activity and banner" in Teams client settings.
