Hello, I will have a request from you, I will open a minecraft server with azure and when there are 100-150 players on this server etc. I don't want to have a lag problem etc.

please also give a clear answer instead of recommending me to ask a different site / forum. PLEASE

Here is the recommendation for 100 players for Minecraft server-

Please convert that spec into Azure configurations manually by going through the options available.

You can also try Azure migrate through excel sheet by placing all your configurations into CSV file.

I haven't worked with or tested Minecraft, but I know for some SQL server loads I have worked with there can be throttling on storage when you reach certain load as you get certain IOPS depending on which size of disks and VMs you choose. Some customers need multiple higher spec Premium SSD disks for those loads. E g one customer with high load need many P30 SSD disks.
You can try to change one or more of these (may need combination change):

VM size with more CPUs (e g 8 CPUs if you had lower before)

VM size with more memory (e g 32GB if you had lower before)

Premium SSD storage OS disk and/or Data disk, e g P30

VM size with "accelerated networking" turned on

Test Java versus Bedrock edition? Not sure if difference in performance?
