Do you want to restrict changes to tables in Word documents? If so, I would like to suggest you try Restrict Editing feature.

• Select the contents exclude tables.
• Go to Developer tab > Protect group > Restrict Editing > Tick the box of 'Allow only this type of editing in the document: No changes [Read only]' > Tick the box of Everyone, which means everyone can edit the content excludes tables. A simple means, if the table does not have Content Controls, would be to select the table and apply a Group Content Control.

Another method would be to convert the table to an image using the snipping tool or a program like Snagit. Then replace the table with the image.
