I'm trying to get my server and domain name so I can auto send emails from my ERP system.
By this, do you mean you already have an Exchange account and would like to know its server and domain name? If this describes your situation, personally I would first suggest contacting your administrator for these information.
If you prefer finding it by yourself, normally the domain name is corresponding to the right side of the user’s e-mail address, that is, let's say your email address is "user1@Company portal .com", then "contoso.com" is the domain name. As per the server name, we can find it using Outlook client:
- Hold down CTRL and right-click the Outlook icon in your system tray.
- Choose "Connection Status", you'll see the server name there:
If you meant to ask about how to set up an Exchange organization from scratch, basically there are two options: Exchange on-premise or Exchange Online.
For Exchange On-premise, you'll need to deploy a domain controller and then manually set up Exchange. You can check the link below for some official documentation like how to plan and deploy Exchange server:

For Exchange Online, that would be much simple as Exchange Online is a hosted messaging solution that delivers the capabilities of Microsoft Exchange Server as a cloud-based service, for more information, you may refer to: Exchange Online service description
