Per my experience, which boot image is picking up during the PXE process has very little impact in most cases because as soon as the task sequence engine starts a task sequence, it checks to make sure that the system is booted to the boot image corresponding to the task sequence. If this is not the case, the correct boot image is downloaded and the system reboots into this downloaded boot image.
By default, PXE uses the boot image associated with most recently deployed task sequence. This means that if you have two deployments with two different boot images of the same architecture deployed to the same system, the more recently deployed task sequence will have its boot image loaded. Only the boot image associated with the most recently deployed task sequence will boot, then when you select your task sequence, it will reboot into the boot image corresponding to the task sequence.
