I'm trying to use the Title property as the default file name for a new document. I create a blank doc then navigate File | Info and enter a Title
When I click Save or Save As the file name defaults to Document1,
what am I missing please ?

I just checked and in my Word 2010, it works manually inputting this in all three methods. That is, it was the default filename.
When something this strange happens my first suspect is one or more poorly-written Add-Ins, which you may not even know you have.
Try closing Word and starting it without Add-Ins. To do this, find the Run command under the Start Menu and copy the following line into the box, press Enter.
winword.exe /a
If this temporarily fixes your problem, write back and we'll talk about Add-Ins.

Thanks for all the replies, I had outlined in red in the screenshot in my original question where I had entered a Title, ("My Title") I've also now tried entering it in Advanced Properties, Quick Parts (where "My Title") does show up if I insert the field, but when I Save As it obstinately defaults to Documentx where x is a number ... One of the great Microsoft mysteries I guess

You can also get at this using the Title document property content control. Insert > Quick Parts > Document Property > Title...
Once
you've entered something in that Content Control, it becomes the default name.
Even if you later delete the Content Control, the document property and default name will still be there.
