Sincerely, if you need to ask this question it might be a good idea for you to get some 1-on-1 time with the vendor from whom you bought your Mac. If that isn't possible, find some local or online training classes. The hits at this link may help point you in the right direction. We can't tell you which "app" to use because we have no idea which apps you have... A decent word processing program would be appropriate for writing letters, but there literally are dozens of possibilities, and the fact is that you may have neither or you may have more than one program which can be used for the purpose.
This Community deals specifically with all releases of Microsoft Word for Mac, but it is not the purpose of this forum to steer you toward any particular software unless there is some specific need that can be addressed only by certain products.
If you do use Word for Mac this Community will be able to help you with specific issues on the use of its features & tools. If you use some other word processing software there should be Support Groups available for that product as well. Many of the more experienced responders here are familiar with a variety of programs, but generally will direct you to the appropriate forum if the question pertains to something other than Word. However, broad, sweeping issues are all but impossible to deal with in this type of forum.
