I have been looking in the app menu (waffle) and "explore all apps" list and none of them contain SharePoint anymore. Can someone explain what happened to it?

You may check if you've been assigned the license to use SharePoint Online.
Go to https://portal.office.com/account/#subscriptions
Check if you are able to find "SharePoint Online" listed there. If not please contact your Office 365 admin to assign the license to you.

Have you tried in another browser?
What will happen if you go to portal.office.com/sharepoint ?
