Which applications you want to learn about ?
Because in Microsoft Office there is many applications such as Excel, Word, Publisher, Visio and others.
The most known are Microsoft Excel, Word and power-point, if you make a search in Google using specific keywords you will find a lot of high links.

First thing to be aware of is that there is no "Office" application. Office is the marketing name for various bundles of MS applications. So you want to learn some, probably not all, of the Office applications:

So, the first thing to decide is which applications you want to learn about.

People have different learning styles. Can you learn
.
In general, I would suggest you spend a few months "playing" with the applications, learning what you can. As you go, make a list of things you want to do, want do better, couldn't figure out. Then take an introductory level class. This way you have a list of questions you can ask in class. After taking the first course, spend another few months using the first lessons. Again, keep making your list of things to learn. Then take another course, an "intermediate" level one.

How do you want to use "Office". Is it strictly for personal use, for school, for work? Make a list of the things you want to do with it. Then you have to figure out which Office application applies to each task. Be aware that often you can use more than one Office application to do a specific task, with a little adaptation.

For personal use you probably can stop at "basic" courses. For school and work you will want to look at 'intermediate' and "advanced" courses.

The first thing you need to learn about is the terminology used by the applications. If you know what command applies in general in the Office application, then you can search for it. If you don't known the right term, it will take more effort to find instructions.

Look on "Ribbon". At the very right end of the tab names is a place labelled "Tell me what you want to do". You can type in there to get help from the application / MS.

Get familiar with searching the internet. For what ever search engine you use, Bing, Google, DuckDuckGo, etc learn the commands you can use to make your searches more focused, more specific.

There is LOTS of free, and paid, learning material on the internet. You just have to search for it.

A key point to keep in mind is that change in computer programs, like the Office bundle, is "evolutionary rather than revolutionary ..."
For example, Word introduced the concept of "styles" back in the 1980s. It doesn't matter what version of Word the learning material is about, the basic concept still applies today. You could get free learning materials for Word 2003 (before the "Ribbon" was introduced), and with just a little adaptation for slightly different command locations you could learn everything you need to know about Word styles as they still exist in Word 2019/2016/365.
The point is, just because the free materials are for Office 2010, or 2007 or even 2003 and earlier, don't ignore them. Take a look. Learn the concepts, then learn how to find them in your current version.

One thing I found helpful when learning Office programs is to buy paper books. There are lots books. If you are just looking for basic information, you can buy one of those "all-in-one Office" books that covers the core Office applications. If you want more extensive, in depth info, pick books that focus on specific applications. You can get books over 1000pages long for US$30-50. The key feature is that they have Indexes that list almost every command and feature in the application. So if you don't know the command name, you can look in the index, and probably recognize the specific feature name you are looking for.
