Would like to ask why font type does not show out when using ctrl+A to select all. Before this, the font type is aligned using ctrl+A and after select again, it does not show out. In the document contains word, picture, table and table of content.

As far as I know, there is no documentation on the specific "limits" so you will have to do some testing of your own.

Inline pictures and tables will be treated pretty much the same as characters.

Note that if you apply text formatting by using styles, you don't have to select large ranges of content and check its formatting.

In a quick test, the limit seems to be about five pages or 20000 characters (including spaces). With six pages (24000 characters) selected, the Font drop down goes blank. I don't know if the same limits apply to all systems.

Can I understand if there is any standard for the documents in large enough category? For example, how many words or paragraphs.

When you select everything with Ctrl+A, Word often won't be able to tell which font has been applied to text. For example, this happens if different text ranges have different fonts applied to them.

However, for any selection which is large enough, Word will fail to report a font name (even if all the text is using the same font). This is a known limitation. You can still (re-)apply a font to the selection, if you wish.
