I go through the post carefully, I think you are using Zoom accessibility feature in Mac to enlarge elements in Word document: How to zoom in or out on Mac - Apple Support. I test on my side and I can repro the same behaviour, it seems that the feature cannot magnify text in document. I am sorry for the inconvenience this causes and would suggest you give feedback on the issue by post in Word Feedback community: Word · Community (microsoft.com), your feedback will promote the related developer team of Word to improve Word to work well with Zoom feature from Mac. Thanks for your efforts and understanding!
As a workaround, you may try Zoom in/out to enlarge text in document by Press CTRL and scroll up/down mouse wheel. You may find more details from the link: Zoom in or out of a document, presentation, or worksheet (microsoft.com)(the feature is similar on Word for Mac.)
