I'm struggling to find a graph that would replicate this format. Is there a way to re-create this data in word?

Just a small addendum to Doug's response...
In case you did not notice, Doug is suggesting using an Excel part in your Word document. Excel has far better tools for data handling and display than does Word.

It seems like a Area chart as per your image. Data that's arranged in columns or rows on a worksheet can be plotted in an area chart. Area charts can be used to plot change over time and draw attention to the total value across a trend. By showing the sum of the plotted values, an area chart also shows the relationship of parts to a whole.

Although the article Mukesh referenced suggests that the same type of chart is available in Word and Outlook. It should be adequate for data as simple as the OP's example.
