How to 'double-space' between words whilst writing?

You can edit AFTER you've finished writing by clicking 'find' > 'replace' > 'find what: [press spacebar]' > 'replace with: [press space bar twice]' > 'replace all'. Then that allows the spaces between words to be double spaced.

'This is an example of text that is double spaced.'

It seems so long winded or is there is an easier way?

    Rather than "regular", based on the 25-plus years that I have been assisting users of Microsoft Word, I would say that it is "very unusual"

    However, using the Replace facility would definitely be the easiest way. I would suggest however that you use the following Wildcard search.

    If you use the simple Replace that you mention, if you were to run it again, you would end up with four spaces between each Word and also, it does not result in two spaces between each Sentence.

    However if you run the above Wildcard replace more that once, it will not add any additional spaces where there are already two spaces.

    I have been involved in preparing manuscripts for publishing for many years and have never seen such a requirement. What is more common is that manuscripts are required to be "double-spaced"--that is, with space between the lines. You can accomplish that by pressing Ctrl+2 or selecting 2.0 on the menu that opens when you click the Line and Paragraph Spacing button in the Paragraph group on the Home tab or by selecting Line Spacing Options to open the Paragraph dialog, then selecting Double in the Line spacing dropdown.

    FWIW, double spacing on a typewriter is 3 lines per inch or "Exactly" spacing of 24 points, which I find more attractive than "double" spacing for text larger than 10 points.

    Thank you for your answer, I'm surprised that this is not a regular request.

    The thing I find unusual is a selection of printing presses for novels requires double spaced words, surly there is an easier way?
