I have finally solved this issue on my own.
TLDR; Basically, on both my iPad and iPhone, I had to open and fully log out (business and personal accounts) of ALL of the Microsoft apps (Office, OneDrive, Teams, Tasks, OneNote), delete ALL of the Microsoft apps, reboot my devices, reinstall the apps, and re-log into each app using my business account only.
Emphasis: The key here is that EVERY SINGLE Microsoft APP had to be logged out of and deleted, devices restarted, and apps reinstalled and logged back into - and in that exact order - before the issue would fix. Not just Office, not just OneDrive, but everything related to Microsoft.
Upon reinstalling and logging in and authenticating successfully, the issues not only went away, but some of the apps also unexpectedly changed in UI appearance.
Note: Up until this point, I was positive that my apps - specifically, Office and OneDrive - were correctly updated because I had already logged out, uninstalled, and reinstalled multiple times from Apple’s App Store… but apparently, I was wrong.
While I’m not certain about what happened to create my app problems, I suspect that there was a conflict related to my level of account access (business or personal; I have both) which was triggered when I renewed my Microsoft 365 Standard Business license renewal during the most recent Microsoft iOS app updates.
I have both a much older personal Microsoft account which is tied to my Surface Pro 3 and its associated older perpetual Microsoft and Office license and a much newer business Microsoft 365 Standard license.
On all of my Microsoft apps on my iOS devices (except for Teams), I had logged into them first at some point using my older personal account before logging in later with my business account.
Though this had never produced any problems for me before, after I realized that my problems started happening around the time I had renewed my business license combined with the app updates, I decided to delete everything Microsoft-related on my iOS devices and get a fresh start….
… Which, on iOS, is more involved than it looks.
Because of how iOS likes to save app settings (even after deletion) and because Microsoft apps handshake with each other, I ultimately had to log out of ALL of my Microsoft apps (a lot of apps, in some cases both business and personal accounts) FIRST before deleting them ALL in order to not only get a “clean” app install but also a “clean” account log-in…
Which is what I apparently needed to fix my problem on both devices.
