I remember I used a layout option in Word called "Notebook", where I was able to divide the content in the document into sections. I can't seem to find it now. Can someone please direct me to this layout option?

You might be interested in knowing that the current editions of Word allow opening Notebook Layout [NBL] documents with limited support for that view. They cannot create new NBL documents, though.
As an alternative take a look at the OneNote program included with Mac Office. Another option is to use Outline View in Word. See these articles re the latter:
