How do I save a document to my hard drive?

I've always kept my documents organized in different folders on my hard drive using 'save as', but with the new version of Word it tells me I don't need to do that. But I WANT to do that! I don't understand why the new version of Word has to be so difficult to adapt to. What if I'm on an airplane and want to work on a document? If I have 'airplane mode' turned on, it won't even let me start Word because I'm not on-line. This is nuts! I'm extremely frustrated! I've had the same problems with excel as well. On the same subject, I can't figure out how to open a docx file I've saved on my hard drive before.

Go to your options and change it.

    File > Options > Save

There is an option to save to computer by default.

Make sure that you are in the Desktop Application, not the online version (which only works on the Internet and has far fewer functions).

... and if you do have a paid subscription for Microsoft 365 personal or family, there will be a link on your account page allowing you to download and install.

Ok - but how do I make sure I'm in the Desktop Application?

If you are in the Desktop application, you should have a Mailings Tab.

Man, I really appreciate you paying attention to my problem. I have come to the conclusion that I don't have the desktop application, but I can't figure out how to get it. I tried going back to the Microsoft download page to try to specify that but I don't see it. Any ideas on that? Thank you so much for putting up with my ignorance.
