Mac OS used to come with ODBC drivers, but Apple decided to cut costs and stopped supplying ODBC drivers more than a decade ago.
Microsoft Excel for Mac comes with one ODBC driver built-in, and that is for Microsoft SQL Server.
If you want to make ODBC connections, you need to install a driver that works with the kind of data source you want to connect to. For network connection based data sources I prefer the drivers from OpenLink Software. For file-based data sources my preference is Actual Technologies. I have used drivers and support from both companies and I highly recommend both of them.
As you add data sources, the chooser dialog will populate. Here's mine at the moment:
I'm not sure what steps you followed to get to the point you got stuck. You have to add a data source connection to the data source before you can use the data.
