I'm not sure if Word has a built-in feature for cropping pictures into custom shapes directly within the app. Instead of that, I'll mention here alternative solution that you can try by using built-in Markup tools on iPad.
1, Prepare the Image with a Custom Shape:
Use a photo editing app or a dedicated shape-cropping app on your iPad to crop the image into the desired shape. Save the edited image to your iPad.
2, Insert the Image into Microsoft Word:
Open your Microsoft Word document on your iPad.
