How do I create an event registration system with Office 365?

I am looking to create a registration for a conference of about 400 people. There are about 15 sessions or so the attendees can go to. Each room has an attendance cap (for fire code reasons). Is there a way (using Office) to create a way for those folks to register all at the same time? I was planning on using a Microsoft form and having attendees list their preferences (but I think that would take me too long to sort all that data to make a finalized attendee list for each session). I don't believe forms have a way to "hide" an option when a capacity has been reached (EX: Session A becomes unavailable on the form after 30 people have registered for it). Does anyone have any ideas on how I could make this work? The ideal goal would be for me to export everything to Excel so I can see their name, email, and the three sessions they're signed up for. Appreciate any help!

    You may use data validation to limit the max number of each session.

    When a session is reach to the max number (30), it will be removed from Dropdown.

    You may check my test file in private message.

    That's awesome! Thank you! One more question--there isn't a way to tie this to a form, correct? In other words, as sessions filled up, they'd disappear off the form so other people couldn't select it.
