Based on the description shared, it seem you are not able to use the Unique and Sort function in the Excel workbook.
If my understanding is correct, please follow the below steps and check the outcome:
Step 1: Quit all Office apps except one Office app such as Excel> Account> Sign out from all Office 365 accounts> Quit all Office apps.
Step 2: Open the Control Panel> User Accounts> Credential Manager> Windows Credentials> Remove the credentials related to Office apps.
Step 3: Reset the Office apps activation state: Reset activation state for Microsoft 365 Apps for enterprise - Microsoft 365 Apps | Microsoft Learn (Method: Use scripts to automate the cleanup process)
Step 4: Restart your PC> Open any Office apps such as Excel> Sign in with your account and check the outcome.
If the problem persists, can you please provide the screenshot of the Excel app Account page? Open the Excel workbook> File> Account> Take a screenshot and share it with us.
