I have a MacBook Pro Old one, with macOS Big Sur. Want to know which MS office would be compatable. I also want to purchase the license key

You can purchase a license for Office 2021, then install a version of Office that can run on your Mac. Here's my article on finding and installing Office on older computers: Most Recent Office You Can Run - Best Practices
It should be made clear to you that Big Sur no longer is supported by Apple. Accordingly, Mac Office no longer is supported on Big Sur by Microsoft. It can be installed but cannot be updated beyond 16.77.1 so there will be no further Security Updates or enhancements regardless of whether you purchase Office 2021 or subscribe to Microsoft 365.
Depending on your requirements you may want to consider alternative compatible software, such as the free LibreOffice. Compare thoroughly before making a decision.

Generally, Microsoft 365 Personal is the best for a single user.
After you have ordered the subscription, the website will link you to an application you download. Download it and run it: it will investigate your computer and install the best version for the computer you are runnning.
