Does deleting the Word App also delete your account? And if you shared a document to others, will they still see the file in question even after the app is deleted?

I need to delete Word because I don't have enough storage, but I'm worried that the file I shared to another will be inaccessible once I do, not to mention my account.

If you uninstall the Office applications, your data files will still be present on your PC, but you'll need to use other programs for editing the files of course.

Deleting your Microsoft account is a separate process. It can be accessed via https://www.office.com. Remember that if you do not have a subscription for Office, the amount of OneDrive storage will be smaller.
