Shortcut for non-breaking hyphen has stopped working in Word (MacBook Pro)

While the shortcut for a non-breaking hyphen (shift + command + -) works fine on my work computer, an iMac, my personal laptop, a MacBook Pro has now stopped accepting this (although has worked fine for years) and when I go to Customise Keyboard, then Common Symbols, the Specify a Keyboard Shortcut boxes are empty and can't be used, being greyed out (see screenshot). So I'm confused as what to do as I need this to work for my editing. How do I make this function again? I'm up to date, this is Microsoft 365 and this is on my desktop app, not online.

This has nothing to do with System Settings/Preferences. Why you were sent there I have no idea. The problem is that Microsoft has made some undocumented changes to keyboard combination assignments — ostensibly toward Mac/Windows parity. Apparently your 2 Macs are running different versions of Mac Office.

On the newer version use Shift+Option+Command+➖ instead.

Shift+Command+➖ now is assigned to Subscript but can be reassigned if you prefer.

Sorry, you are completely incorrect here. I think you should delete your comment. Bob was entirely correct in his response.

Why did you even post such an erroneous reply? The key assignment of concern is in the program, not the OS & the OP didn't even mention anything about the Help menu.
