Hi,
I am trying to get an SMTP connection with my Wordpress website.
I am using the contactform plugin called FluentForms, in addition with FluentFormsSMTP.
Followed the exact guide from the plugin their website, but still it gives the warning "outlook API not correct."

The plugin developer is saying that it has to do with outlook.
Anyone has experience with this?

From your description, seems that it is more related to development, please kindly understand that here we mainly focus on general issues about Outlook desktop client and know little about addins. To better solve your issue, I will add the tag “office developmen”.

I would recommend you to use the plugin WP Mail SMTP
It's very stable and reliable. You can use it with Outlook 365. I have tried it and it works perfectly.
WP Mail SMTP is a WP Forms Product so it will work better with WP Forms, but I think that the Contact Forms plugin you are currently using will work just fine.
