Ribbon Display Option is missing

Yesterday I had the option to click on the little down arrow to show and choose Ribbon Display Options (Full -screen mode, Show tabs only, Always show ribbon, Hide Quick access toolbar). But today I no longer have that option. Now there is a little up arrow that only allows me to "Collapse Ribbon".

How do I get the Ribbon Display Option to appear?

    I FOUND A SOLUTION!

    If you go to 'Customize Quick Access Toolbar'

    Set it to show ALL options - there is a 'Hide the Ribbon' tool you can add.

    In excel, what worked for me is actually double clicking on the Home. It appears to work for Word as well.
