How to actually set the default font so that it stays on what you chose?

I've tried google this up for a long time but every result I get gives the same solution; Switch the font setting. That does not work. I've set the default font to Calibri 16, both from the Settings and from the specific Fonts tab, but every new page and every new topic on the same document reverts back to Aptos 14 and I have to manually keep changing both the Font and the Font size on the same document. It never saves it for a new document either.

That Font issue is just an tip of the iceberg of how many issues I've had with this software ever since I started using it less than a year ago. I've had to completely redo more than one dozen page projects because I made a new empty page on the second or third page after I already had ten or so pages on the document, and then I can't do anything in the page; I can't write anything, can't add pictures into it, can't create a table of content into it (it doesn't appear as an page onto the TOC either, doesn't have page numbers, but still you see it there when previewing the document). It doesn't even let me delete it. The only purpose I see for it is to ruin my project and force me to start over. Which then leads me back into fighting with the fonts and font sizes, again..

There is no single place to set the defaults for all Office applications. My instructions below apply to Word for Windows, the desktop version.

In Word for Windows, you can change the default font through the Font dialog box (Ctrl+D).

Make the desired changes and then click Set as Default. When prompted, choose "All documents based on the <template name> template" option.

Later, if/when you are prompted to save your template, choose to do so.

The modification is saved to the template whose name is indicated in the message (usually Normal.dotm unless you specifically based your document on another template) and applies to the current document and to future documents based on the template. Existing documents that you want to modify must be dealt with one by one.

Even after you have changed the default, individual styles may be set to override the document default font.

Stefan has answered your question about the default font. As for the blank page, this is likely the completely blank even page that Word will insert if you have an Odd Page section break following an odd page. Even if you didn't intentionally insert such a break, Word will convert a Next Page break to an Odd Page one if you have restarted numbering at 1 (or any odd number). See http://wordfaqs.ssbarnhill.com/BlankPage.htm
