If I download a folder/file from a shared OneDrive link (OneDrive for work), can anyone see that I downloaded it?

Based on your description, you would like to know whether others can see if a file shared via OneDrive has been downloaded.
I’ve tested this on my end, and when I share a file with a user, if the user downloads it, currently there is no default configuration that allows to see whether the file was downloaded or edited in OneDrive.
Only the file owner can see the last modified date in the details section if owner made changes to the file. As for downloads, there is no specific indicator showing whether the file has been downloaded by another user. However, in the activity details, the file owner can see who has viewed the file, but not who has downloaded or edited it.
So, in short, while file views are visible, downloads and edits are not tracked in the same way for shared files in OneDrive.
