MS word used to keep show the accept and reject buttons on the review tab. But now they are buried under the tracking pane on the review tab. How can I keep them visible, so that I don't need to reopen that pane with each edit?

You can add the Accept and Reject commands to the Quick Access Toolbar.

On the Review tab, click Accept and then right-click the option you want to add to the QAT. Choose Add to Quick Access Toolbar.

Repeat these steps with the Reject button.

Yes, you can remove the Proofing group. Go to File > Options > Customize Ribbon. In the list on the right side, expand the Review item and click on the Proofing item. Then click the Remove button between the lists, and click OK.

The Editor button will still be on the Home ribbon, or you can press F7 to call it. If you don't use the Ink feature, you can remove the Ink group the same way. Also, if you want to put the groups back later, you can use the same dialog and the Add button to do it.

The Tracking group (and many other groups on the Review and other ribbons) will be collapsed if the Word window is narrower than a particular size, which depends on the screen width in pixels and on the resolution chosen in the Windows display settings.

If Word isn't nearly or completely as wide as the screen will allow, drag the left and/or right edges of Word toward the sides of the screen. At some point the collapsed group(s) will expand from this

    to this:

If the Word window is already maximized and the group is still collapsed, go to the Display page of the Windows Settings and increase the display resolution to the next larger value, if that's possible.

I'm already at maximum resolution and full screen. This didn't used to be an issue, but I think that the editor pane is now much bigger than it used to be. Is there a way to get that one to compress, or just remove it from the review ribbon?
