I understand that you would like to be able to use shortcuts for some of the functions in OneNote on the iPad, and I understand that this would be more convenient for you to work on when you are travelling as opposed to a Mac.
Actually, you can't use shortcuts directly on the iPad, so I'm assuming you're using an external keyboard? Just to explain, according to the official article, the shortcuts in OneNote only support the following four methods:

While the iPad + external keyboard is not a complete replacement for the Mac at this time, you can try a combination of manual actions + some shortcuts or use a trio of tools to improve efficiency.
