How does one switch from using desktop apps to using access via the web? and without losing any docs or files?

    Your question is a bit vague, so answers may not address your specific concern.

    On a basic level, you save the file before you exit the app (web or otherwise).

    Then you open it again when you need to in future, make the changes and save it again.

    This regardless of web or desktop.

    Are you saying that you don't want a desktop version of Office anymore? In that case, you can certainly use the web versions of Excel, PowerPoint and Word, if you are prepared to store all your files in OneDrive and if you a prepared to lose a lot of functionality. The web versions are limited, compared to the full apps that run on a Mac (or PC).
