After trying to validate the request I get "Error We encountered a problem processing your request. Please try again later.". Sometimes I get to the language choosing menu, I choose English (US) and then it also fails. I tried different browsers, computers over the course of a few hours but the issue persists.

Try using the Microsoft's Media Creation Tool. Instead of downloading the ISO directly, use the Windows 11 Media Creation Tool. Run the tool and select “Create installation media”, then choose ISO file. This method bypasses the web-based ISO download and is more reliable.
Hi! Sadly I can't run the Media Creation Tool, since the laptop on which I am trying to create the bootable USB is not a windows machine.
Do you have a VPN? Try opening it and then retry downloading Windows 11 ISO
Do you have also an extra device that could test if windows 11 iso can be downloaded there?
Yes. I did try this now with a few vpn locations, then I even tried retrying with a hotspot and mobile data of my phone, I still get the same error.

On the point of an extra device, it also throws the error. I can't run media creation there either, because it is also not a windows machine.

This isn't a solution to the problem. People having to download the ISO are in poisitions where they can't solve the problem with a USB. Hence the need to download the ISO.
